Yummy Salty Nibbles

Need something fun to nibble on and liven up your weekend? We’ve got just the thing. Give these super easy and very yummy Salted Pretzel Bites a try. They can easily be made gluten free by simply substituting gluten free flour for regular wheat flour. Your family and your taste buds will thank you 🙂

A while back we gave you a recipe for quick and easy 2 ingredient bread sticks. We decided to try using that recipe to make some quick and easy Cinnamon Pretzel Bites. Making pretzels is all about the method of how they are cooked. What makes pretzels have the texture and crust they are loved for, is the method you use to boil them before baking them. So that’s what we tried with the bread stick recipe. The Cinnamon Pretzel Bites were really tasty! But sometimes what you want to snack on is something salty rather than something sweet. So this time instead of making cinnamon pretzel bites we made Salted Pretzel Bites. We looked on Pinterest to see if anyone else had tried this and yup!…we found some using this method on www.thegunnysack.com The only real difference there was that they buttered and salted the nuggets after they were baked instead of before. Doing it that way works well too but we liked the salt baked on. Try both ways to see which you prefer. Very quick, very simple, very easy, very yummy!

Salted Pretzel Bites

1 cup self rising all purpose flour (Gluten free works well too but use just slightly less than a cup)

1 cup plain Greek yogurt
Melted butter
Kosher salt

Mix the flour and yogurt together to form a dough either in a bowl by hand or in a mixer. The dough will be soft and you will need to flour your hands to keep the dough from sticking to them. Divide dough into pieces and on a floured board or pastry cloth roll into bread sticks. Cut each breadstick into nuggets.

Boil 8 cups of water and add 1/2 cup baking soda to the water. When it comes to a full boil, drop in a few nuggets, (no more than about 10 at a time).

When they rise to the top use a slotted spoon to remove them and then place them on a parchment lined baking sheet. Brush with melted butter and sprinkle liberally with kosher salt. Bake in a preheated hot oven at 425 degrees for about 7-10 minutes or until lightly browned.

Place them in a bowl or on a platter and enjoy these yummy nibbles with spicy mustard or a cheese sauce for dipping.!

* If you don’t have self rising flour you can make your own by adding 2 teaspoons of baking powder and 1/2 teaspoon salt to each cup of flour
