Just the thought of an eclair can make one’s mouth water.
Who doesn’t love the oblong of choux pastry, most commonly filled with cream and topped with chocolate icing?
The name for the French pastry first made an appearance in 1861, and now eclairs are a common feature at most bakeries. The name is derived from the French word for lightning.
As for the reasoning — apparently, it is because they are so delicious that they are gobbled down in a flash.
