Whats For Dinner?
The answer to why they want dinner…they’re hungry. The answer to the question “Whats for dinner?”…today it’s White Chicken Chili.
Simple ingredients, easy to make, and thoroughly delicious too! You’ve got to give this one a try. We think you’ll be happy you did, and so will your family!
White Chicken Chili
2-3 lbs of boneless, skinless chicken breast*
1 onion, chopped
2 cloves of garlic, minced
1/4 cup olive oil
4 cups chicken stock
2 cans cannellini beans
2 cans diced green chiles
2 teaspoons salt
2 teaspoons chili powder
2 teaspoons dried oregano
1 tablespoon ground cumin
8 oz. pkg cream cheese, cut into small chunks
Cooked rice (optional)
Cut the chicken into small chunks. Chop the onion and mince the garlic. Add oil to a large heavy bottomed pan and saute onions and garlic. When the onions are soft and translucent, add the chicken and salt, and saute the chicken. When the chicken is cooked through, add the chicken stock, cannelloni beans, chiles and seasonings. Stir to mix thoroughly and cover the pan. Reduce the heat to low and continue to cook for 1/2 hour. Remove the lid and increase the heat. Allow to cook until the sauce reduces slightly and becomes a bit thicker. Add the cream cheese and stir until it is dissolved. Pour over rice if you like, and top with grated cheese, chopped onion, a dollop of sour cream and cilantro. Add a salad, some tasty cornbread on the side and dinner is served!
* If you are really in a hurry you can substitute the meat from a rotisserie chicken for the chicken breasts. You can also cook this chili in a slow cooker. Simply put everything in a slow cooker and cook for 3-4 hours on high.
