The Potato -What Could Be More Irish?


If there is an iconic food that everyone knows is associated with the Irish it would have to be the potato!

Obviously the Irish are not the only culture that enjoys these starchy delights.  It is estimated that amongst the global population in the last decade, each of us consumed approximately 73 pounds of potatoes per year.  That’s a lot of spuds!  But who could blame us.  Potatoes are easy to come by, very inexpensive and are so versatile in the ways they can be prepared and enjoyed.

In the last year your Two Chums have brought you numerous ways to enjoy these popular vegetables.  Here are just few of them:

The Baked Potato

Shepherd’s Pie

Potato Latkes

Potato Salad

Potato Gnocchi

Roasted Potatoes

Potato Soup

Potatoes Au Gratin

Today in honor of St. Patrick’s Day and all our Irish friends and family we will share one more potato dish….Hasselback Potatoes.  These are not particularly Irish…they are actually just dressed up roasted potatoes…..but they are also quite delicious 🙂

For each person you will need 1 potato, 1 tablespoon of butter, 1 tablespoon of olive oil, a couple sprigs of fresh thyme, 1/2 clove of minced garlic, and salt and pepper to taste.

Wash and dry each potato.  Hold the potato between the handles of two wooden spoons and make thin slices.  The spoon handles are there to keep you from cutting all the way through the potato.  Melt butter with olive oil and garlic and fresh thyme.  Pour over the potato being deliberate about making sure the butter mixture drizzles down between the slices.  Sprinkle with salt and pepper.

Bake in a 425 degree oven for 30-40 minutes or until potato (or potatoes) are browned.  Pour the butter in the bottom of the baking pan over each potato and serve.

One bite of this and you’ll be sure you have the “luck of the Irish” on your side 🙂

    I recently saw Hasselback potatoes made on America’s Test Kitchen. The only hint they gave that you did not was to wash the starch off the cut potato slices to keep them from sticking together while baking. Sounds so yummy!
