Sweet Summer Salsa
3 cups of green grapes
1/2 red onion finely chopped
2 jalapeños, finely chopped
1/2 cup cilantro, finely chopped
1/4 cup fresh mint, finely chopped
Juice and grated rind of 1 lime
1/4 -1/2 teaspoon salt or to taste
Finely chop 2 cups of the grapes, a food processor works very well, just be sure to pulse your processor so as not to puree this batch of grapes. In your blender or food processor (if you are using one), puree the remaining cup of grapes. You can chop each of the remaining ingredients in your food processor or finely chop them by hand. If you are using the food processor, chop each ingredient individually as some take a bit more time than others and you want to be sure not to over process the ingredients and make the salsa mushy. Stir everything, including the grape puree, together and chill until ready to eat. This is especially tasty with chips that have been freshly fried or warmed in a 250 degree oven for about 7-8 minutes and sprinkled with garlic salt.
