Sweet Comfort
We finish out our week with a yummy dessert that we think surely falls in the category of comfort foods…Banana Cream Pie!
If you like bananas, rich, creamy custard filling, and whipped cream, this is the dessert for you. And even if you are one of the millions of cooks who feel intimidated by make a pie, you can’t go wrong with this one…it is ALWAYS a favorite. And as the one who offers this delicious comfort food, we guarantee you will be everyone’s favorite too 🙂
Banana Cream Pie
Filling
1 cup of sugar
pinch of salt
1/4 cup flour
4 large egg yolks
2 1/2 cups of half and half
1 teaspoon vanilla
3-4 bananas, sliced
Whipped Cream
2 cups heavy cream
1/4 cup sugar
1 teaspoon vanilla
Make dough and prepare crust according to recipe for Salted Caramel Pie. Bake until a light golden brown. Cool while making filling.
To make filling, mix sugar, salt and flour in a pot. Stir together half and half and egg yolks. Add half and half mixture to the flour/sugar mixture and stir to combine. Cook over a medium heat, stirring constantly, until custard is thickened. Turn off heat and add vanilla. Allow custard to cool.
Cut bananas and cover bottom of the pie shell. Add cooled custard to cover bananas and fill shell. Whip the cream with sugar and vanilla until stiff peaks form. Cover pie with whipped cream and prepare to feel some sweet comfort 🙂

I just love banana cream pie. Mine is always messy and I’m glad yours is not toooo perfect. That first slice is always a problem. Yum!
