Sweet Bites -Nutella Swirl Meringues
Sometimes we just need a little something sweet that isn’t heavy but is satisfying. These Nutella Swirl Meringues hit the spot!
When you want something easy to make, with ingredients you likely already have on hand, this can be your go to cookie.
Nutella Swirl Meringues
4 egg whites
1 cup sugar
1 teaspoon vinegar
1/4 teaspoon salt

Start by ling a baking sheet with parchment paper. Preheat oven to 250 degrees.
In a bowl of a stand mixer (or deep bowl with a hand mixer) add vinegar and salt and beat egg whites until stiff peaks form. Continue beating gradually adding sugar 1 tablespoon at a time until fully incorporated. Once all the sugar is added keep mixing until meringue is very stiff and glossy about 5-6 minutes more. This will give the sugar a chance to dissolve so that your meringue isn”t gritty
Use an ice cream scoop or soup spoon to drop equal amounts of meringue on to cookie sheet. You can make these cookies any size you choose as long as you make them a consistent size they will cook evenly. Be sure to leave space between each mound of meringue as they will puff as they cook. Make a small dip in each meringue. Top each dip in the mound of meringue with a small spoonful of Nutella. Using a bamboo skewer or toothpick, swirl the Nutella into the meringue.
Bake the cookies for 1 hour in a 250 degree oven.
If you bake these in a conventional oven these will have a crispy exterior and a fluffy interior.
If you bake these in a convection or forced air oven, the finished cookies will still be crispy outside but will be chewy inside.
Either way they are delicious, sweet and satisfying for any sweet tooth.
