Surprise Pancakes
Made with only 2 simple ingredients, these are gluten free and dairy free. The surprise is how yummy these pancakes are! What a fabulous way to start your day, or your week for that matter. It is so surprising that these could actually have the taste and texture of pancakes with how they are made. And you can feel great about eating them, because they are VERY healthy and full of protein. These are truly an amazing breakfast. Fast, easy and most importantly really, really good! Now THAT is abundant living 🙂
These pancakes are not the fluffy thick kind, they are the thin tender sort of pancake. For each serving, in your blender, mix together 1 banana and 2 eggs. We also added a pinch of salt but that is optional. Pour the “batter” on to a lightly buttered griddle or pan as you would with any pancake batter. As these cook, they won’t get the bubbles you would normally see on other pancakes due to the baking powder or other leavening you would typically use. When the edges of these pancakes look set, use your spatula to lift the edges and see if they are ready to turn. When they look lightly browned, flip and cook on the second side.
Serve hot with melted butter and maple syrup. Or sprinkle on blueberries once you have poured the batter on the griddle, for blueberry pancakes. You could also sprinkle with chocolate chips for chocolate chip pancakes. Though they won’t be quite as healthy that way, we are confident they would be very tasty.
No matter how you make them, be sure you do in fact make these for yourself or your family. We are pretty sure you too will get a big thumbs up 🙂

Golly Robin, these do sound delicious and so simple to make. Even I could do this. I think I’ll ask Jackie toake me a stack for supper some night. That way I won’t have to clean the blender!!!

These really are delicious and I love traditional banana pancakes so the flavor is close to that.
