Super Snack For Super Bowl
As you no doubt are well aware, even if you aren’t a football enthusiast, Sunday marks the 55th annual Super Bowl. Whether you are planning to watch alone or with friends, (or even if you aren’t planning to watch) some tasty snacks are in order. We have a very good one for you today that also happens to be, as a bonus, gluten free!
These little cocktail hotdogs are wrapped in the dough of Brazilian cheese bread and baked to perfection. They are simple and easy to make, and even easier to eat…great finger food for any event but especially the Super Bowl as they somewhat resemble little footballs. They are a variation on the classic ‘pigs in a blanket’ or mini corn dogs both of which are always enjoyed by kids and adults alike. Serve them up with ketchup, mustard, or your favorite hotdog condiments and you will be a football fan favorite come this Sunday. Give these a try. Brazi Bite Mini Dogs
1 batch of Brazilian cheese bread dough (see recipe below)
1 package cocktail hot dogs
Condiments of your choice
Make the dough for the Brazilian cheese bread and break off pieces the size of a walnut. Roll out a piece with your hands into a rope about the size of your little finger. Place a cocktail hotdog in the center and pinch the ends together. Place seam side down on a parchment paper lined baking sheet. Bake at 350 degrees for about 25 minutes or until the dough is beginning to turn golden brown. Remove from baking sheet and serve right away.
If you are making these ahead of time, reheat them in a preheated 350 degree oven for about 7-8 minutes.
Brazilian Cheese Bread
1 cup whole milk
1/2 cup sunflower oil (or your favorite light cooking oil)
1 1/4 teaspoons salt
2 cups tapioca flour or starch (most supermarkets now carry tapioca flour or starch in the baking section)
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
Scald the milk, oil and salt. Immediately stir in the tapioca flour and stir to combine. The mixture will be very thick and clumpy. Put this mixture into the bowl of a stand mixer or into a large bowl and use a hand mixer to beat together for 1-2 minutes on medium speed. Add in the cheeses and beat into the mixture. When it is well combined and sticky add in the eggs and beat again for 2-3 minutes on medium speed.
If you are making the Brazi Bite Mini Dogs proceed as directed. If you want to just make little cheese bread bites, use a tablespoon or a mini ice cream or cookie scoop and place scoops on a parchment paper lined baking sheet. Bake in a 350 degree oven for 25-30 minutes, or until they are puffed and lightly browned.
