Gooey No-Bake Crunch Bars
80 club crackers or butter crackers
2 sticks or 1 cup of butter
2 cups graham cracker crumbs
1 cup brown sugar
1/3 cup white sugar
1/2 cup milk
2/3 cup peanut butter (you can use almond butter if there is peanut allergy)
1/2 cup chocolate chips
1/2 butterscotch chips
Line a 9 x 13 baking pan with foil allowing the foil to extend out over the ends of the pan. Arrange 1/2 of the crackers over the bottom of the pan to completely cover the pan.
Melt the butter and stir in the graham crackers, brown sugar, white sugar and milk. Bring the mixture to a boil. Once it begins to boil, time it for 5 five minutes then remove the mixture from the heat and pour half of it over the crackers. spread the layer even;y over the crackers. Repeat with the second layer of crackers and the remainder of the butter sugar mixture, again spreading it evenly over the crackers.
In saucepan over medium heat, melt the chocolate chips, butterscotch chips, and peanut butter and stir to combine. Pour this over the top of the crackers and butter layers and chill for at least 1 hour. When firm, using the foil left over the ends of the pan, remove the contents from the pan and cut into bars. Refrigerate until ready to serve.
We are calling these a Summertime Treat, but once you’ve tried them we think it is likely you will want to make them again and again all year long. 🙂
