Summer Salad
What is more refreshing and tasty on hot summer days or nights than a fresh yummy salad full of summer’s bounty and goodness?
This delicious salad not only uses fresh summer ingredients but also allows you to use up some left overs too. Crunchy, creamy, salty and sweet, this salad has it all! Give it a try and let us know what you think…summer is calling 🙂
Summer Salad
Tomatoes
Corn (left over ears of corn on the cob if you have them)
Cucumbers
Green Onions
Avocado
Garlicky Croutons (to make this salad gluten free, make croutons with left over gluten free bread)
Creamy Basil Dressing
1 cup Best Foods or good quality mayo
1/4 cup fresh lime or lemon juice
1 cup fresh basil leaves
1 teaspoon salt
1/2 teaspoon pepper
1 clove of garlic
Add all ingredients to a blender and blend until smooth and creamy.
Chop ripe tomatoes into chunks. Slice kernels from ears of leftover corn on the cob, or if you don’t have leftover corn, use a bag of sweet frozen corn. Add chunks of cucumber, chopped green onion, chunks of ripe avocado, and croutons and lightly salt and pepper ingredients, then stir all together. Make the dressing and pour over veggies and croutons and stir again. Serve immediately.
