Summer Refreshment – Minted Watermelon Lemonade
As the dog days of summer come upon us, we can all use some tasty refreshment. And what could be better than some homemade Minted Watermelon Lemonade! This is easy to make and oh sooooo delightful to drink. What we like best about this tasty drink is that it is cool and not too sweet or sugary. It is just sweet enough and perfectly refreshing. And it’s a festive drink that everyone can enjoy. Perfect for a summer BBQ, a family get together, or a quick way to liven up just an ordinary Wednesday night.
Minted Watermelon Lemonade
1/2 cup freshly squeezed lemon juice (you can also use lime juice if you prefer)
1/2 cup sugar
2 cups watermelon pieces, rind removed
2 cups water
3-4 springs fresh mint (more mint springs for garnish)
Start by putting the lemon juice and sugar in the blender and let it run on low speed for about 3-4 minutes. This will dissolve the sugar in the juice. Now add the watermelon, water, and leaves from 3-4 sprigs of fresh mint. Blend for about 30 seconds. Add some ice and blend again for 15-20 seconds.
Serve over crushed ice. Makes 6 servings.
