Summer Delight

When is describing something using the word crumble NOT a bad thing? Why when it’s a Blackberry Crumble!  Usually when one hears the word crumble, there is at least some awareness that it could be associated with something falling apart.  In this case, it is really all about something coming together.  Something sweet and thoroughly delicious!  Blackberries seem to be available everywhere you turn this time of year.  And what better way to take advantage of summer’s abundance of these wonderful berries than to make a simple and oh so yummy dessert that you won’t be able to resist.  Trust us….you’ll be making this one again and again all summer long:-)

 

 

 

Blackberry Crumble
1 1/4 cups butter, melted
2 1/4 cups sugar
2 cups flour
3 teaspoon baking powder
1 teaspoon salt
2 cups whole milk
1 teaspoon vanilla
4 cups (about 3 packages) fresh blackberries

Preheat the oven to 350 degrees and pour 1/4 cup (0r 1/2 a stick) of the melted butter, in a baking dish.  Swirl to coat the baking dish.  You can also use a large cast iron skillet.

In a bowl, stir together the remaining 2 cups of the sugar, the flour, baking powder, and salt. Next add the milk and combine. Add the rest of the melted butter and whisk until smooth.

Pour the batter into the baking dish of melted butter.  Drop the blackberries over the top using all of the blackberries. Sprinkle the remaining 1/4 cup of sugar over the top of the berries.


Bake until edges are golden and crispy, 50-60 minutes.
Serve warm with whipped cream or vanilla ice cream.
