Spaghetti Squash “Spaghetti”
It’s not only gluten free, it’s really low carb as well. Add in that it’s healthy, easy and tasty and why wouldn’t you give this pasta substitute a try? This is so easy and a great way to get some extra veggies in your diet too. Give this “spaghetti” a try and let us know how you like it 🙂
Spaghetti Squash “Spaghetti”
Spaghetti Squash (1 large squash serves 2 people or use 1 small squash her person)
Olive oil
Salt
Your favorite pasta sauce or our favorite pasta sauce
Parmesan cheese
Cut the ends off the squash then cut it in half length wise. Scoop the seeds out with a tablespoon. Drizzle with olive oil and sprinkle with salt, then turn cut side down on a baking sheet. Bake in a 350 degree oven for 1 hour.
When the squash is soft and easily pierced with a fork, use the fork to fluff the strings of the squash to form “Spaghetti”. Either serve in the shell as we did here, or remove the strings of squash to a plate. Top with sauce and cheese and add salad and dinner is served!
(If you have a child who prefers his or her pasta with just butter or butter and cheese, try removing the strings of spaghetti squash to a plate or bowl and add that topping. You might just see your little one happily eating some vegetable for dinner.)
