Soup’s On – Cauliflower Cheddar
All that leftover turkey that will become sandwiches needs a good side dish….we’ve got that!This is the perfect pairing for your leftover Thanksgiving turkey sandwich….yum!!!  Eat up and enjoy your abundant life filled with love, joy and delicious soup and a turkey sandwich 🙂
Cauliflower Cheddar Soup
1 head of cauliflower
1 pound extra sharp cheddar cheese
4 cups chicken stock
4 tablespoons butter
4 tablespoons flour
olive oil
salt and pepper
1 clove garlic, finely minced
Chop the cauliflower into bite sized pieces. Â Spread on a baking sheet and drizzle with olive oil and sprinkle lightly with salt, pepper and garlic. Â Roast in a 400 degree oven until cauliflower becomes soft and very slightly browned about 20 minutes.
Melt butter in a large heavy bottomed pan and add flour. Â Cook flour and butter until flour just begins to brown very very slightly. Â Add in chicken stock and stir with a whisk until mixture becomes slightly thickened. Â Add in roasted cauliflower and cook over medium heat for about five minutes. Â Puree 3/4 of the mixture in a food processor or heavy duty blender. Â The remaining 1/4 of mixture will have some of the bite sized pieces of cauliflower for the soup.
Stir mixture all together and add in cheese.  Stir until cheese is completely melted.  Sprinkle with chopped green onion and serve hot ….maybe with a delicious turkey sandwich on the side.  Happy Day After Thanksgiving 🙂

This soup looks so delicious! I have made broccolli cheddar but never cauliflower cheddar I’m gonna try it:)
