Soup’s On – Cauliflower Broccoli Cheddar
In the cold days and nights of January nothing hits the spot like a bowl of yummy, hot soup. We’ve got one for you toady that is simple and delicious!
Cauliflower Broccoli Cheddar Soup
1/2 of a head of cauliflower
2 good sized stalks of broccoli, roughly chopped
3 cups chicken stock (homemade or Better Than Bouillon)
1/2 -1 pound extra sharp cheddar cheese, grated
1 cup half and half or heavy cream
1/2 teaspoon Lawrys Seasoned Salt
1/2 teaspoon ground pepper
Cook the cauliflower and broccoli in the chicken stock until it is tender. Puree the cauliflower and broccoli and stock in a blender or food processor, in batches. When you have pureed all of the cauliflower and broccoli with the broth, return it all to the pan and add 1/2 of the cheese, along with the Lawrys salt and the pepper. Stir until the cheese is melted. Add in the half and half or cream, and then taste the soup. Add more cheese until the flavor and consistency of the soup is the way you like it. Keep warm over a very low flame until ready to serve. Garnish with croutons and sour cream.
You can make your croutons with gluten free bread and this will be a delicious lunch or dinner that anyone can enjoy. This soup is warm and creamy and satisfying. It will fill you up and warm you up and put a smile on your face. You should give this a try soon. 🙂
