Simple Supper – Spaghetti’s Easy Sauce
Who doesn’t love a bowl of simple pasta with simple sauce? We live in a complicated world and many of us live somewhat complicated lives that require many complicated choices. Supper shouldn’t be one of them. Today we have a simple meal that is so easy to make and easy to eat and one that everyone will love. With just a few simple ingredients you can have dinner ready in minutes and a happy family to show for your time 🙂

Spaghetti with Simple Tomato Sauce
1 lb. spaghetti
2 – 4 tomatoes … enough to make 1-1 1/2 cups fresh tomatoes
1/2 cup extra virgin olive oil
2 cloves of garlic, finely grated or chopped
2 teaspoons sea salt
1/2 teaspoon black pepper
1/2 teaspoon dried red pepper flakes (optional if you like your sauce spicy)
Parmesan cheese, grated
Fresh basil, chopped
Cook spaghetti as package directs until ‘al dente’. Then drain, reserving about 1/2 cup of pasta water.
While pasta is cooking, make the sauce. Cut tomatoes in half and using a grater, grate the pulp into a bowl. Discard the skin. Add salt, pepper and garlic to the tomato pulp.
Heat olive oil in a sauce pan. Add tomato mixture and cook until fully heated and the oil and tomatoes are combined. When pasta is done, drain the spaghetti. Add some of the pasta water to tomato sauce and cook a couple minutes more.
Add drained pasta to the sauce and heat the whole mixture through. Top each serving with parmesan cheese and some chopped fresh basil.
