Simple Supper – Crispy Chicken

There is nothing unusual about sauted chicken, but when it is this easy and flavorful with perfect crispy skin, you’ve just got to give this method a try.
Crispy Sauted Chicken
4 chicken thighs with bone in and skin on
salt and pepper
2 tablespoons olive oil
2 tablespoons butter
This is not really a recipe as much as it is a method for making chicken with crisp skin and juicy and tender meat.
Liberally salt and pepper each chicken thigh. Put olive oil and butter in a heavy bottomed frying pan, (cast iron works really well for this), and heat over medium high heat. Add chicken pieces skin side down to the pan.
Place another heavy smaller pan on top of chicken and place a heavy can or a couple of heavy cans on top to create a weight on the chicken. This allows the chicken skin to brown nicely and evenly. Cook the chicken without removing the weight for about 15 minutes. Check chicken after about 15 minutes on medium high heat for the skin to be browned and crispy.
Turn chicken and continue cooking uncovered for another 5-8 minutes depending on the size of the thighs. Remove and serve with a fresh salad for a deliciously easy and simple supper.
