Scandinavian Almond Bars

IMG_2183Do you like the flavor of almond? Want a recipe for something quick, easy, and sweet?  You can’t go wrong with these!  This recipe makes a lot of bars and you may think they will never all be eaten, but don’t be fooled…they are so yummy they won’t last long!  If you like almond you will surely LOVE these delicious Scandinavian  cookies that are a cross between shortbread and sugar cookies.

Scandinavian Almond Bars

Bars:
1 3/4 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup butter
1 cup sugar
1 egg
1/2 tsp. almond extract
Milk, for brushing
1/2 cup sliced almonds

Icing:
1 cup powdered sugar
1/4 tsp. almond extract
3-4 tsp. milk

Preheat oven to 325 degrees. Stir together flour, baking powder and salt.  In a large bowl, beat butter until softened.  Add sugar and beat until fluffy.  Add egg and almond extract, and beat well.  Add the flour mixture and beat until well mixed.

Divide the dough into fourths, and form each portion into a 12 inch roll.  Place 2 of the rolls 4-5 inches apart on an engrossed cookie sheet.  Flatten each roll until it is about 3 inches wide.  Repeat with remaining rolls.  Brush each flattened roll with milk and sprinkle  about 2 tablespoons of almonds on each.  Bake 12-14 minutes or until edges are lightly browned.  While still warm, cut crosswise on the diagonal into 1 inch strips. Cool on a wire rack.

Stir together powdered sugar, almond extract and milk.  Drizzle over the cooled bars.  Store in an airtight container.

      Absolutely! Coconut oil in place of butter and almond milk would be a natural for dairy milk. How do you replace egg?
