Summer Simmer Pot
5 springs of fresh mint
3 inch knob of fresh ginger, sliced
1 lime, sliced
1 tsp. black peppercorns
8 cups of water
In a Dutch oven or heavy bottomed pot, combine mint, ginger, lime, and peppercorns. Cover with water and bring to a simmer over low heat. Continue to simmer uncovered for up to 2 hours.
