Salad Days – Sunshine Salad

Sunshine Salad is the name we’ve attached to this bright and sunny salad. You’ll want to try this one ASAP 🙂

This is so easy and really fresh and satisfying. The dressing is sweet and sunny tasting and is perfect on a green salad that you make with fresh fruit. The ingredients in the salad itself are our suggestions. Add or change anything to suit yourself or your family.

Sunshine Salad
Romaine, chopped
Chunks of roasted or fried chicken
Sliced strawberries
Diced apple
Sliced green onion
Avocado cut into chunks
Roasted salted cashews
Dried cranberries

Cut romaine and add remaining ingredients. Toss with dressing and enjoy!

Sunshine Salad Dressing
1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup honey or sugar
1 teaspoon salt
1/4 teaspoon pepper
1 cup avocado oil or grapeseed oil (or any light tasting oil)
Place both juices and sweetener and salt and pepper in a blender and mix. With the blender running on medium speed add the oil slowly and continue mixing until the dressing is well blended. Pour over salad, toss and enjoy. Store any unused dressing in a container in the refrigerator.

Remember you could substitute pear or mango for apple. Use pecans, walnuts or almonds in place of the cashews or even peanuts could be substituted. You can use raspberries instead of strawberries. You could add blueberries, either fresh or dried, in place of the cranberries, or use raisins, or chopped dates. Experiment and have fun. You can make the salad your own creation. Use whatever fruit and nuts you enjoy. The dressing will tie everything together. Give it a try and let us know what you think.
