Roasted Artichokes- The Beautiful Food
What could make a weekend dinner more enjoyable than the fun food…artichokes! They just happen to be beautiful too. Some years ago we gave you a method/recipe for making artichokes. Today we have another option for preparing this tasty veggie which we love and think you will too 🙂

Roast Artichokes
2 artichokes, halved
Lemon, halved
1 tablespoon salt
1 tablespoon dried oregano
Marinade:
1/3 cup olive oil
1-2 cloves garlic, minced
1/2 teaspoon salt
pinch of black pepper
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon tarragon
4 slices crisp bacon, crumbled
Parmesan cheese
Place artichoke halves in a pan with enough water to cover them and add lemon and salt and 1 tablespoon of oregano. Boil for 30 minutes or until leaves of artichoke pull away from stem easily.
Remove artichokes from water and place on a baking sheet. Drizzle each half with marinade. Roast in a 375 degree oven for 20 minutes. Add bacon and Parmesan cheese and return to oven for 10 minutes until cheese is lightly browned. Serve with Garlic Aioli.
