Protein Peanut Butter Bark
How can something be high in protein, low in sugar and still be tasty and satisfy a sweet tooth craving?
Answer: Peanut Butter Bark. This very tasty treat is made with cottage cheese, peanut butter, pure maple syrup, and dark chocolate. it is rich in protein and an all around “healthy” snack/dessert, but you would never guess it by how rich and tasty it is.
We had seen versions of it all over social media and decided to try it for ourselves. It was a hit with kids and adults alike. It could hardly be easier to make but unless it all gets eaten immediately we learned it does need to be kept in the freezer or it softens up quickly. Not all food fads on social media turn out to be as good as they have been touted to be, but we think this one is, especially if you are wanting a treat but not wanting a lot of sugar. Protein Peanut Butter Bark
2 cups cottage cheese
3 tablespoons natural unsweetened peanut butter
3 tablespoons honey or real maple syrup
1/3 cup dark chocolate chips, melted
1/3 cup chopped peanuts or granola
In a food processor mix cottage cheese, peanut butter and honey or syrup until completely smooth and creamy. Spread out on parchment paper into a rectangle about 1/4″ thick.
Dollop the cottage cheese mixture with the melted chocolate then using a toothpick or a wooden skewer, swirl the chocolate through the peanut butter mixture forming a marbling of chocolate.
Sprinkle with peanuts or granola and freeze for about 3 hours. When completely set up and hard, break into pieces and enjoy!
