On The Side – Spiced Rice
Sometimes all we need to liven up our ordinary meals is a good side dish. Today we have a rice dish that is guaranteed to make your meal seem exotic even if it is otherwise ordinary. We got this recipe from the British chef, Jamie Oliver. The cloves and cinnamon stick give this rice a warm taste and the turmeric gives it a lovely warm color. Served with roasted chicken, or simply sauted chicken breasts or thighs, and some peas, or a salad and you have a special dinner that once was ordinary.
Simple things, simple changes, to otherwise ordinary foods, can brighten up a meal. And special meals can make everything feel like a celebration, even on a Tuesday. Happy supper, happy celebrating 🙂
Spiced Rice
1 cup of rice
2 cups of boiling water
1 teaspoon salt
1 tablespoon sugar
1 cinnamon stick
1 teaspoon whole cloves
1 tablespoon turmeric
Fresh mint leaves, chopped for garnish
Measure out the cup of rice and add it to a a pan with a good fitting lid. Pour two cups on boiling water over the rice and stir in the salt, sugar, cinnamon stick, cloves and turmeric. Place the lid on the pot and cook over a medium low flame for exactly 10 minutes. Remove the lid and fluff the rice with a fork. Pour it into a serving dish and sprinkle with the mint. Your dinner, and your “celebration” is ready 🙂
