Mud Pie
Last week we gave you a simple and delicious recipe for coffee ice cream. With the end of summer quickly approaching we wanted to give you another delicious way to enjoy that yummy coffee ice cream. One that even those who don’t particularly like coffee find really delicious! This is so simple to make it might just end up becoming one of you favorite “go-to” desserts 🙂
Mud Pie
1 package of Nabisco Famous Chocolate Wafers (or an equal amount of Oreos with the cream filling removed)
1 stick butter, melted
1/4 cup sugar
1/2 gallon coffee ice cream (homemade or store bought)
Fudge topping (homemade or store bought)
Whipped cream
Crush chocolate wafers and add sugar and butter. Press the cookie crumbs into an 8″ or 9″ springform pan. Bake in a 350 degree oven for 12 minutes. Remove and cool completely. Allow ice cream to sit out for about 5 minutes to soften slightly. Scoop ice cream and press into the cooled crust, smoothing the top until even. Freeze until ice cream is again firm. At least 1 hour. Add fudge sauce topping. Refreeze for at least 1 more hour. Remove from the freezer and allow to set for 5 minutes before cutting. Just before serving, top with whipped cream. This is perfect for any celebration.

P.S. Speaking of celebrations…today is a big day in our family as we celebrate my daughter, Carrie. She is smart, wise, patient, loyal, and an all around wonderful daughter, mother, wife and friend.
