Mmm Mmmm – French Onion Soup!

1 (2)Now that the evenings are beginning to have a bit of a chill, what better to serve your family than a hot bowl of home made French onion soup?  This recipe is sooo easy and quite delicious.

Firstly, you do need heavy soup bowls that can go in the oven like these on sale at Sur La Table,

No matter what bowl you choose to serve this delightful soup in, you just can’t go wrong:-)

These are the ingredients (serves 4 people)

2 cans Campbells condensed consommé
1 can Campbells condensed beef broth soup
3 large onions
1/2 stick butter
Croutons – you can make them yourselves or buy a bag at the grocery store.  You will need about 60 croutons.
1 lb shredded mozzarella cheese
Worcestershire sauce

Peel and slice the onions.

Melt butter in a frying pan. Place the sliced onions in the pan and sauté them until they are soft and transparent – not blackened.

In a separate pot, put the 3 cans of soup plus 2 cans of water.  Add about 3 dashes of Worcestershire Sauce.

Once the onions are done, put them into the soup mix and keep on heating.

Put about 15 croutons in each bowl and pour soup mixture (now with onions added) into each bowl to almost the top of the bowl.

Add a good amount of cheese – more than half a cup – to each bowl.

Broil soup for about 15 – 20 minutes or until the top is golden brown and the cheese melted.

Serve with a lovely little salad and there you have it!
