Mini Cookie Cheesecakes

When we say “simple” we really mean simple. This recipe is truly easy and requires no cooking….how simple is that!?
Mini Cookie Cheesecakes
12 oz. cream cheese at room temp (1 1/2 packages)
1/4 cup sugar
1 cup whipping cream
1 teaspoon vanilla
20 sandwich cookies
In your mixer combine the cream cheese, sugar and vanilla and beat until smooth. Reduce the speed to low and add the whipping cream. Gradually increase the speed of the mixer to high and continue beating until the mixture is thick and stiff. This should take about 3 minutes or so.
Break up 8 of the sandwich cookies and fold them into the cream cheese mixture. Place the remaining 12 cookies each in the bottom of a mini cheesecake pan with removal bottoms. (You can find a Mini Cheesecake Pan from Amazon when you click here.)
Divide the cream cheese mixture equally among the 12 openings. Tap the pan to settle the filling around the cookie “crust”. Refrigerate for at least 3 hours or up to 24 hours. When you are ready to serve remove from the pan and top with broken pieces of cookie or a mini cookie.
Any type of sandwich cookie will work but Oreos are always a good choice, or use gluten free sandwich cookies to make this a gluten free dessert.
