Mini Cheese Burger Cups
These are gluten-free, simple to make, easy to eat, and let’s be honest…who doesn’t love a cheeseburger…or ANYTHING mini?
If you happen to be avoiding or limiting carbs but love the flavor of a juicy cheeseburger, these will be right up your alley.
This is much more of a method than it is an actual recipe. To make the Mini Cheeseburger Cups, start by seasoning 1 lb. – 1 1/2 lbs. ground beef with salt and pepper and a little garlic powder. The amount of meat you use will depend on the size of your muffin pan. We used about 1 1/4 lbs. of ground beef to make 12 cheeseburger cups. Basically the hamburger meat is pressed into muffin tin cups like you would press pie dough into the cups, to form a sort of bowl shape.
Next you fill the inside of this meat “bowl” with grated cheddar cheese (or any cheese of your choice). You could of course use blue cheese or Swiss or crumbled American cheese. Top with cooked crumbed bacon if you happen to like bacon cheeseburgers. We made some of each kind.
Bake in a preheated 400 degree oven for 20 minutes.
Use a fork or a small knife and lift the mini cheeseburger cups out of the muffin pans.
Serve plain if that’s how you or your children like cheeseburgers, or dress as you would a classic burger with a pickle, a tomato slice, some chopped raw onion (or grilled onion if you prefer) and a dollop of Thousand Island dressing. Add a salad and french fries or mashed potatoes and…voila! Dinner is served 🙂
