Matzo Brei – A Passover Treat

One of the best benefits of this season leading up to Passover is that there is matzo available almost everywhere in every market.  Delicious by itself spread with butter, my favorite matzo dish is matzo brei…a sort of Jewish twist on French toast….yummy!If you have never heard of, much less tasted or made, matzo brei, it is about time you enjoyed this wonderful iconically Jewish treat this weekend.  There are probably as many ways to make this as there are people who eat it but this recipe is pretty basic and really delicious.  People sometimes use shmaltz (chicken fat) instead of butter and add onions and make this a savory dish but I prefer it the way I first had it at the rabbi’s house in my Jewish neighborhood.

Make this for breakfast for your family or just for yourself tomorrow.  I promise, you won’t be sorry and for years to come you’ll be looking forward to seeing those boxes of matzo in the market come Spring:)

 

 

 

Matzo Brei

4 pieces of matzo
4 eggs
1 cup of milk
pinch of salt
pinch of sugar
2-3 tablespoons butter

Break up the matzo and pour the milk over it.  While it sits and softens a bit, beat the eggs with the salt and sugar.  Melt the butter in a frying pan until really hot and bubbly.  Remove the matzo from the milk and add it to the eggs and pour into the hot buttered pan.  Stir until eggs are just set.  Dust with powdered sugar and serve with fresh raspberry or strawberry jam or orange marmalade or maple syrup.  This is truly a treat you’ll look forward to again and again!
