Madeleines-GF
Madeleines are wonderful little clam shell shaped treats that are a cross between a tea cake and a cookie. As per usual when it comes to food, the French are on their game. These special morsels are no exception.
If you’ve ever tasted these magnificent little delights, with or without a cup of tea, you know well what Proust was speaking of in this quote. And here is the best part. They can easily be made gluten free without compromising their delicate and oh so delicious taste!
You need a special shell shaped pan to make them. You can often find them at Marshalls or Home Goods or Williams-Sonoma or certainly you can order them on Amazon. The link is here.

Gluten Free Madeleines
1 cup of Krusteaz gluten free all purpose flour (or your favorite GF all purpose flour)
1 cup almond meal or almond flour
1 3/4 powdered sugar
2 sticks of butter
1 1/4 cups egg whites (approximately 8 egg whites)
1 tsp honey
grated rind of 1 lemon or orange (optional)
Preheat oven to 350 degrees. Sift together the flour, almond meal, and powdered sugar. Melt the butter and add honey and grated rind if using, then set aside to cool. Add this to the egg whites and mix into the dry ingredients. Mixture will be thick but pourable. Place in the refrigerator for at least 1 hour but up to overnight.
Butter well the molds, or use a generous amount of cooking spray. Place spoonfuls of batter in the molds just until barely full. The madeleines. will rise slightly during baking and form a dome shape. They may crack slightly in the middle, this is to be expected. Bake for approximately 15 minutes or just until golden brown. Allow to sit in the pan for 30 seconds to 1 minute after removing from the oven then turn out of the pan and cool while making the next batch. Be sure to wash and then rebutter the pan between batches.
Dust with powdered sugar. Make some tea and enjoy. Bon Appétit!
