Leftovers 411 – Corned Beef
If, like so many people, you had corned beef for St. Patrick’s Day dinner last night, you just might have some leftovers. We have a suggestion for how to turn those leftovers into a new meal for tonight or later this week 🙂Leftovers never have to be relegated to being a repeat of the original meal.  As with most any meat, corned beef can present a variety of options.  One of them is hash.  This well known dish is often offered on breakfast menus in restaurants.  But corned beef hash is not just for breakfast.  This is one meal made of leftovers that is very satisfying for both breakfast and dinner.
Cube your leftover potatoes, carrots, of course your corned beef, and chop some onions.  Saute all these ingredients in a little butter and season with salt and pepper to taste.  Cook over a medium high heat until the meat and potatoes are crispy on the bottom.  Remove from frying pan onto each dinner plate.  Top each serving with a fried egg.
Add some of your leftover soda bread and a green salad and dinner is served!  Love, joy and oh! the abundance 🙂

I love the shamrock tortilla chips they are adorable and I’m sure are delicious:)
You can often buy those green tortillas at the 99 cent store. They are made with spinach and are naturally green. Using a 4 leaf clover cookie cutter you can easily cut them out from the tortillas and fry them. they are fun to make a taste really good 🙂
