Kick It Up A Notch

Everyone loves Rice Krispie Treats. Today we are going to encourage you with how to kick it up a notch!

If you’ve never made these classic sweets, they are so simple. A combination of butter, marshmallows, and rice cereal. And as simple as they are, they are really yummy. But today we are going to encourage you to embellish these delicious cookie/treats, to step them up and make them just a little more yummy.

Below you will find the basic recipe for these rice cereal treats. But we have added toasted chopped pecans and some toasted coconut. Then drizzled the top with semi sweet chocolate and then white chocolate.

You could use almonds or cashews or walnuts or peanuts or macadamia nuts in place of the pecans. If you don’t like coconut you could add sweetened dried cranberries, or chopped dates or banana chips or any other dried fruit you like or a combination of these ingredients.

(If you want this recipe to be gluten free use rice cereal that is designated gluten free. Rice Krispies are sweetened with malt flavor which contains gluten. )

Here is the basic recipe that makes enough to fill a standard baking sheet. You can, of course, cut this recipe in half to make less, but do yourself a favor and make the full recipe. We think you will be very glad you did 🙂

Basic Rice Cereal Treats

2 sticks of butter
4 bags of mini marshmallows
2 boxes (12 oz each) of plain rice cereal OR
12oz. regular rice cereal and 12oz. of cocoa rice cereal

Melt butter in a large pan then stir in marshmallows and stir constantly until the marshmallows have thoroughly melted and the mixture is smooth. It will be sticky. Remove from the heat and immediately stir in the cereal. When well mixed turn into a baking sheet lined with parchment paper and after wetting your hands, press the mixture into an even layer. Allow to cool then cut into squares or triangles or rectangular bars.

This is the basic recipe. To embellish it, stir in your favorite “add-ins” with the cereal. After you’ve pressed the mixture into the baking pan, drizzle with melted semi sweet chocolate or milk chocolate. Next over that immediately drizzle with white chocolate.

If you really want to gild the lily as they say, sprinkle a few more chopped nuts on top. Refrigerate for about 15 minutes to allow the chocolate to firm up. Cut and enjoy!
