Jewish Penicillin – A New Twist
Chicken soup has long been referred to by many as Jewish penicillin. Long before the common antibiotics that are so often overused today were even in existence, there were Jewish mothers and chicken soup. It has great curative qualities that Jewish mothers and grandmothers have used for years. The title of the popular book, Chicken Soup For The Soul, alludes to these healing properties that are associated with chicken soup. We shared with you our favorite method for making classic chicken soup earlier this year. Now with cold and flu season on us,and every other commercial on television and billboard advertising flu shots, we thought we would remind you of this alternative remedy and give it a new twist. We think you will like this whether you or your loved ones are a little flu-ish, you have just had a rough day, or a bowl of homemade goodness is what would hit the spot, this is satisfying and delicious, and good for whatever ails you. Add some of that yummy dutch oven bread we told you about not long ago and you are all set.

Chicken Pesto Soup
6 cups of your favorite chicken broth (or homemade chicken stock)
3-4 pieces of roasted chicken, bones removed and meat shredded
2 big handfuls of fresh baby spinach
1 can of cannellini beans
Pesto
Freshly shaved or grated Parmesan cheese
