Jeremy And The S’Mores Cake
This is a tale (albeit a short but sweet one) of how my clever grandson, Jeremy, who it just so happens came to make a cake that tastes like s’mores. Jeremy is reading a book for school entitled A Tangle of Knots.
It seems that within the story there is a cake…and not just any old cake…a S’mores Cake. I must confess here that while I have made many cakes in my life, and eaten many, many more, I have never eaten or even heard of a S’mores Cake. But Jeremy informed me that not only was there such a thing but that he had the recipe and wanted to make it to take to school the next day to share with his teacher and his friends in his reading group.
All this came up on Monday night about an hour before we were sitting down to dinner….Monday nights are our “family dinner” nights when our children and grandchildren delight my husband, Randy and me, and join us for some fun and food.
But back to the tale…..Jeremy told me he not only had the recipe but he wanted to make the cake right then and asked me to help guide him. He produced the recipe and off to the market he and Randy went to buy more graham crackers (you need an entire box) and some marshmallow fluff, which, as could be predicted, is the filling in the cake. Everything else we needed I had in the cupboard.
It was a pretty simple recipe
S’mores Cake
(as adapted from A Tangle of Knots)
Butter two 8 inch cake pans and using the cake pans as a template, trace two circles onto waxed paper and cut them out. Place one waxed paper circle in the bottom of each pan. Butter each pan again covering the waxed paper and the sides of the pan as well. Sprinkle the inside of the pans with some flour and tap the pans to distribute evenly. Now preheat the oven to 350 degrees.
For the cake:
1 box graham crackers
2 teaspoons baking powder
1 cup butter
2 cups sugar
5 eggs
2 teaspoons vanilla
1 cup milk
1 jar Marshmallow Fluff
Chocolate Frosting
1 cup semi sweet chocolate bits
3/4 cup butter
1 1/2 cup powdered sugar
1/3 cup sour cream
pinch of salt
Place the graham crackers in the food processor or blender to make fine crumbs. Add the baking powder to the crumbs and set aside.
In a large bowl beat the butter and sugar until light and fluffy. Add the eggs one at a time beating well after each one. Add in the vanilla.
Beginning and ending with the crumbs alternate adding the crumbs and the milk to the butter and sugar mixture, and beat until everything is well mixed. Divide batter in half and turn it into the prepared cake pans and bake for about 40 minutes or until a tooth pick inserted in the middle of the cake comes out clean.
In no time we were taking the 2 layers of cake from the oven to cool while we had dinner. Then it was time to add that marshmallow fluff filling, the second layer, and the yummy chocolate frosting.
But then for good measure…because a cake made of graham cracker crumbs, sugar, milk, eggs, and butter, with marshmallow fluff filling and rich chocolate frosting wasn’t decadent enough, he decided to cover the top in mini marshmallows and chocolate chunks!
Here is where I confess I did not actually have a piece of this cake to vouch for the tastiness of it. We will just have to take Jeremy’s word for it….though I may have licked some of the frosting off my finger, and I may have eaten a few of the crumbs from the cake pan along with that frosting off my finger, and I may have added a mini marshmallow to the whole thing…and if in fact I did do that, I could tell you it was YUMMY!
I am grateful for so many, many things in this life, but maybe none more than the time I have with my grandbabies. They are growing up so fast! Jeremy is already taller than I am, but no matter how big they get they will always be my grandbabies. And having them still ask me for help, and seeing their sweet happy faces….

I’ve read the book and am glad it is read in school. Lots of school districts do not allow homemade food any more but what better way to make the book memorable! Good for Jeremy. In my classroom we tried to use all our senses to make the stories come alive.
