Irish Oatmeal Bread
St. Patrick’s Day is coming in a couple of days. We tend to think of St. Patrick’s Day food in terms of dinner. But we all eat breakfast on St. Patrick’s Day too. We have a really good idea for your St. Patrick’s Day breakfast, or snack, or for tea time, or anytime you want a little something simple, gluten-free, quick, and healthy. And did we mention it is yummy too?
Irish Oatmeal Bread

4 cups Organic Oats
2 cups Honey Vanilla Greek Yogurt
2tsp. Baking Soda
Pinch of Salt
3 Tbsp. Flaxseed
2 Tbsp. Pumpkin Seeds
2 Tbsp. Sesame Seeds
3-4 Tbsp. Milk
Preheat oven to 350 degrees and grease the loaf pan. We like to use coconut oil to grease the pan. Trader Joe’s has a really good spray coconut oil.
Place the oats in a large mixing bowl. Add salt and seed mixture. Mix together.
In a separate bowl add yogurt and baking soda. Stir and allow the mixture to sit for a few minutes. It will fizz up. Add 3-4 Tbsp. of milk.
Next add the yogurt mixture to the oats and mix until well blended and a dough-like consistency is formed. Make sure the oats are well blended with the yogurt mixture.
Pour the mixture into the loaf pan. Place in the oven for 60 minutes.
Allow to cool (or not) and slather with Kerrygold Butter. For a bit more sweetness, you may even want to drizzle with a little honey too 🙂
