Ice Cream – Minty And Fresh
If you love the flavor of fresh mint, love chocolate and love ice cream, you are going to LOVE this easy and delicious mint chocolate chip ice cream! Often mint chip ice cream is artificially colored green and has an imitation or artificial mint flavored taste. Using fresh mint leaves to flavor this homemade treat makes it one you will want to have on hand in your freezer all the time. It is the best we’ve ever tasted and think you will think so too. Fresh Mint Chocolate Chip Ice Cream
(Makes 3 pints)
3 cups half and half
2 cups heavy cream
1 1/2 cups sugar
1 cup packed fresh mint leaves
4 oz. chopped dark chocolate
Pour into a sauce pan 3 cups half and half, with 1/1/2 cups sugar and mint leaves. Simmer until bubbles form around the edge of the pan. Turn off the heat and allow the half and half, sugar, mint mixture to sit until it is cool, about 1 hour. Add cream and refrigerate until chilled. Remove mint leaves and add chopped chocolate to mixture. Process according to your ice cream makers directions.
Place finished ice cream into cartons and then into your freezer to allow the ice cream to freeze until very firm about 2 hours.
