Honey Garlic Chicken
2 boneless skinless chicken breasts
Salt and pepper
1/4 cup cornstarch
4 T butter
2 cloves of garlic, minced
3 T apple cider vinegar
1/3 -1/2 cup honey
Cut chicken breasts in half crosswise to make two thin fillets of chicken, then cut those thin fillets in half to make two smaller pieces. Each breast will now be 4 smaller pieces. Repeat with the second breast. Dredge each piece of chicken in the cornstarch. This will help the sauce stick to the chicken once its sauted. Sprinkle librally with salt and pepper.
Melt the butter in a frying or saute pan and add garlic and chicken. Saute chicken pieces on both sides until browned and chicken feels firm. Remove from the pan. Lower heat and add vinegar and honey. (The amount of honey you use will depend on how sweet you like the sauce. Use the lesser amount and add more honey to taste.)
Stir to combine and allow to reduce slightly. Return the chicken to the pan and coat in the sauce. Serve immediately over mashed potatoes and drizzle with extra sauce. Delicious!
