Homemade Honey Nut Granola
There is no denying that honey and oatmeal make a great combination. Also no denying that everything seems to cost more these days. So making your own Honey Nut Granola is both an economical and delicious endeavor, not to mention healthy and satisfying.
Granola is a great pantry staple. It can be eaten with some milk as a cereal, eaten plain as a quick snack or treat, used as a topping for an apple crumble, or sprinkled over some ice cream to “gild the lilly” if you will for dessert. Give this recipe a try and don’t be afraid to add in other things you like to tweak it to your own taste.
Honey Nut Granola
4 cups gluten free oats*
1/2 cup flax seed
3/4 cup honey (local and raw honey is best )
2 cups pecans (feel free to substitute almonds, walnuts or cashews or any nut you prefer)
3/4 cup dried unsweetened coconut
1 teaspoon salt
1/2 coconut oil
1/4 cup water
2 teaspoons vanilla
1/2 teaspoon almond extract
Start by preheating your oven to 250 degrees
Stir together in a mixing bowl oatmeal, nuts, coconut and flax seeds.
Combine honey, coconut oil, water, salt and vanilla and almond extracts and stir together with a whisk.
Add honey mixture to oat mixture and stir to fully coat the oats and nuts.
Turn onto a lightly oiled baking sheet. Bake for 45 min to 1 hour or until golden and toasted. Cool completely and store in a sealed jar or closed air tight container.
You can add in other dried fruits or seeds before toasting. Experiment and make this your own signature granola. Have fun with it. Bon Appetit!
*Just a word regarding keeping this gluten free if that is a concern or need. Always use gluten free oats but be aware if after eating any oatmeal product, even a gluten free one, if you aren’t feeling quite right stop eating oats. Apparently, the protein in oats can mimic gluten (also a protein) in some individuals and cause a similar reaction after eating them.
