Homemade Goodness
In this particular case, goodness equals homemade tortillas! They are more simple than you might think to make and NOTHING beats the flavor and taste of warm delicious homemade tortillas.
For only a bit of money you can buy some masa marina, (that’s the corn flour to make the dough that can be found at most grocery stores or on Amazon), a tortilla press to shape your tortillas, and a warmer to keep all those delicious tortillas piping hot until our ready to eat.
Homemade Corn Tortillas
2 cups masa harina
1 1/3 cups water
Measure the flour into a bowl. Pour the water over the flour and mix the water into the flour until fully combined about 2-3 minutes. Add more water as you go by tablespoons until the dough is no longer dry and crumbly. When it is fully mixed together for a ball. Pinch off small pieces of dough and form small balls of dough to be used to make each tortilla. This amount will make between 16-18 tortillas.
Using two sheets of parchment paper or plastic, one for each side of the press, use the press to form a tortilla.
Peel the tortilla from the paper and place on a very hot griddle or in a cast iron pan. Cook for abut 30 seconds then flip to the other side and cook for another 20-30 seconds. Return to the first side and finish cooking for about 20 seconds. Place the fresh tortilla in the warmer to keep hot until all of the tortillas are finished
Spread these delights with butter or avocado and prepare to be delighted…enjoy!
