Cheesy Bacon Crackers
48 Town House Crackers or Schar Gluten Free Table Crackers*
8 oz. sharp cheddar cheese
12 slices of bacon, cut in half
1/3 cup brown sugar
Preheat oven to 250 degrees. Place a cooling rack on top of a baking sheet. Cut cheese into 24 equal slices. Place a slice of cheese between two crackers and wrap each one with 1/2 slice of bacon. Repeat until all the crackers, cheese, and bacon are used. Place crackers on the rack so grease from bacon can drip on to the baking sheet as it cooks. Sprinkle each crackers with brown sugar.
Bake for approximately 2 hours until bacon is crisp. Remove immediately from the baking rack so cheese doesn’t cool there and stick.
These can be baked in the morning and reheated just before serving in a preheated 300 degree oven for 10 minutes.
