Happy Pi Day!
It’s international Pi Day. And do we have a “pie” for you! In case you are unfamiliar, Pi is the Greek symbol meaning “constant”. Pi Day celebrates a mathematical constant, the ratio of the circumference of a circle to its diameter, which is approximately 3.14. Thus Pi Day is celebrated on 3/14 or March 14th. And because it references a mathematical principle involving a circle and is called “Pi” it is only natural that the way to celebrate is with pie! So here is a delicious one for you.
This is a classic English dessert and while most recipes for it are nearly all the same with only slight variations, we like this one from errenskitchen.com the best! This yummy dessert gets its name from being a cross between a banana pie and a toffee pie…it’s a Banoffee Pie 🙂
Banoffee Pie
Crust:
1/2 cup butter, melted
9 oz graham crackers crushed
Filling:
1/2 cup butter
2/3 cup dark brown sugar
1/2 teaspoon salt
1 14oz can sweetened condensed milk
Top Layer:
4 small bananas
1-2 teaspoons lemon juice
Topping:
1 1/4 cups whipping cream
6 tablespoons confectioners sugar
1 teaspoon vanilla
grated chocolate
Mix graham cracker crumbs with melted butter and press into a pie plate. Chill for 10 minutes.
Melt butter and brown sugar over medium heat stirring constantly until sugar dissolves. Add sweetened condensed milk and bring to a rapid boil for about 1 minute stirring until it forms a thick golden caramel.
Spread caramel over the crust. Cool and then chill for 1 hour or until you are ready to serve.
Slice bananas and coat with lemon juice. Place banana slices over the caramel.
Whip the cream with the confectioners sugar and vanilla until soft peaks form.
Cover banana slices with whipped cream and decorate with grated chocolate.
