GF Valentine Chocolate Dessert For Two
Valentine’s Day is now less than two weeks away. Whether you celebrate on the February 14th or another day, whether you cook for your valentine or celebrate out somewhere, and whether you or your loved one is gluten free, anyone you love will enjoy and appreciate this yummy chocolate dessert for two 🙂 We found this easy and very tasty chocolate dessert for two on Pinterest from a site called SnappyGourmet.com. It’s perfect for the dessert in a romantic meal for you and your lover….chocolatey and special and just enough for two. In less than an hour and with only a few simple ingredients, you can make a really special treat. And the bonus is that it is gluten free!
Almond Chocolate Dessert -GF
3 tablespoons butter
2 tablespoons honey
1/3 cup chocolate chips (dark chocolate, semi-sweet chocolate or milk chocolate)
1/2 cup almond flour*
1 egg beaten
1/2 teaspoon vanilla
1/4 teaspoon salt
Preheat oven to 350 degrees F. Lightly spray 2 four ounce ramekins with nonstick spray or grease lightly with butter or shortening.
Place butter, honey, and chocolate chips in small microwave safe bowl. Microwave for 30 seconds, then stir until smooth. If chocolate chips are still a bit lumpy, microwave an additional 15-30 seconds or until smooth. Cool. This is an important step because if you add in the egg before the mixture cools, the egg could ‘scramble’. Once the chocolate is cooled to the touch, add almond flour, egg, vanilla, and salt to cooled chocolate mixture. Spoon batter into prepared ramekins. Place ramekins on a baking sheet.
Bake at 350 degrees F for about 25-30 minutes or until toothpick inserted in the middle comes out clean.
*Almond flour is actually very very finely ground almonds. On most things you would likely want to use almond flour made with blanched almonds (the skins are removed before the almonds are ground), but for this dessert you can use either the blanched or unbalanced almond flour. You can buy almond flour (or almond meal as it is sometimes called) at Trader Joe’s and at most grocery stores.
