GF Tasty Bites

If you’ve been following Two Chums for a while you might have guessed that at least one of this weeks posts on some of our “favorite things” would involve food in one way or another. So today is the day πŸ™‚

Technically, this isn’t a “favorite thing” we came across as much as it is a “discovery” that came out of some experimenting.

Last June we gave you a recipe for some very easy 2 ingredient breadsticks that are simply made with equal amounts of GF self rising flour and yogurt. If you don’t have self rising flour you can make it in no time by adding 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to 1 cup of GF all purpose flour.

Lately, we had been thinking about those breadsticks and wondering if they might be able to be converted into pretzels or pretzel bites like the kind you can get at the mall that are rolled in cinnamon sugar. When you are gluten free there are lots of little simple pleasures like pretzel bites that you just can’t get anymore because places like those stands at the mall or at a baseball game or movie theater just aren’t set up to make and sell GF products.

So we decided to experiment and whipped together some GF self rising flour and yogurt. Next we rolled out the dough as we would have for making breadsticks. Then each “breadstick” was cut into small bites.

1 cup GF self rising flour
1 cup whole milk yogurt
8 cups of water
1/2 cup baking soda
Melted butter
Cinnamon sugar

After they were all cut, we used the method one uses to make pretzels have the smooth exterior that is just a slight bit chewy. You add baking soda to some boiling water then turn off the water. Add the pretzel bites a few at a time for about 30 seconds or just until they rise to the surface of the water. When they have risen to the top of the water remove them with a slotted spoon and place them on baking sheet lined with parchment paper.

Bake them in a 350 degree oven for about 10-12 minutes or until they are a light golden brown, then dip them in melted butter and roll them in cinnamon sugar.

These are now most certainly one of our “favorite things”! They are sweet and delicious little bites of enjoyment. Try them this weekend…we know you will be so glad you did πŸ™‚

And speaking of sweet and favorite things (or people), another sweet thing happens to two of my favorite people tomorrow. Jackie and her husband, Dennis, celebrate their 28th anniversary.
