Fresh Cranberry Relish

Our chums Hilary shared her recipe for Fresh Cranberry Relish. It is sure to make your Thanksgiving dinner much more enjoyable and abundant….Not to mention beautiful !
Fresh Cranberry Relish
1 bag of fresh cranberries
1 apple, cored
1 orange with peel, ends cut off
1 cup chopped pecans
1 cup sugar
Before starting, freeze the cranberries. Put frozen cranberries in food processor and chop until fine, dump into bowl. Then chop the apples and oranges in the processor and add them to the bowl. Add nuts and sugar to taste. Stir to combine. Refrigerate to blend flavors. Yummy and fresh tasting.

This is almost the recipe for orange-cranberry-nut relish that I make every year. The addition of 1/2 tsp. almond extract enhances the mixture. My recipe came from the New England Buttery Shelf Cookbook. Delightful to me being illustrated by Tasha Tudor who uses Corgis in her watercolor illustrations.
The addition of almond extract would definitely add another layer of flavor. I think I’ll give it a try. Thanks Wendy 🙂
