French Butter Cookies
As the dog days of summer approach we all need a little break and sometimes a little treat to keep us going. Here it is…with a glass of iced tea or lemonade you have the perfect summer treat 🙂
These cookies are the French version of English shortbread cookies. Very similar but a touch richer with the addition of the egg yolk. Thanks to The Gardening Foodie for this recipe for a very tasty cookie!
French Butter Cookies
1/2 cup of butter softened to room temperature
1/2 cup powdered sugar, sifted to measure
1 egg yok nat room temperature
1/2 teaspoon vanilla
1 1/8 all purpose or cake flour
granulated sugar for coating the cookies
You can double or even triple this recipe if you are having guest and need more…even if you aren’t having guest the chances are once you taste these you will definitely wish you had made more.

Can this be made gluten-free?
Yes. I use Cup4Cup gluten free flour for these and most every cookie I make. I like it because as the name implies I just trade regular all purpose flour for GF flour in the same amounts the recipe call for using.
It is the GF flour for any kind of pastry recipe that I have found best, but I suppose most GF flour would work.
