Easy Roasted Beef
Start salting th meat generously on both sides. It is best if you can allow the meat to set out of the refrigerator before you salt it to allow it to come to room temperature or at least not be really cold before you begin cooking. Other wise the outside heats up and can even be nearly burned before the inside of the meat gets cooked.
Next pre-heat your oven to 450 degrees. Start by searing the salted meat in a hot, heavy bottomed oven proof pan with just enough oil so that the meat won’t stick. Cast iron is a really good choice for this. Allow it to brown and form a crust on each side. This will take about 5 minutes per side and is important for sealing in the moisture in the roast or steak so that it will come out juicy. When it is well browned place the pan in the pre heated oven and roast for about 15-20 minutes per pound for medium rare doneness. Let it go slightly longer if you like your meat more well done.
Remove it from the oven when the time is up and allow it to sit for 5 minutes with some foil over it to let it finish cooking and keep all the juices in the meat.
Slice and serve with your favorite sides. Enjoy!
