Easy Peasy Blueberry Jam
One of the joys of summer is the sweet juicy produce that one can find in nearly any market. Blueberries are everywhere right now and using them to make this easy 3 ingredient jam will of course be a summer favorite!
If you, or someone in your family, is a fan of blueberries be sure and get some on your next trip to the market and make this yummy jam straight away. You can obviously use it on toast or waffles, but you can also use it to top some ice cream or as a filling between the layers of your favorite vanilla cake or as a swirl or topping on your favorite cheesecake.
And don’t forget make enough to give as gifts at the holidays when blueberries are no longer in season but the love of them is still very much in season. Yum!
Easy Blueberry Jam
3 cups of blueberries (we used organic berries but you can use whatever you find at the market)
1 cup of sugar (again we used raw organic sugar but plain white sugar will do the trick and make a very tasty jam indeed)
1 tablespoon lemon juice (this is usually about the juice from one small lemon or half of a larger lemon)
Wash the berries. Place them in a large heavy bottom pan and mash them up.
Add the sugar and lemon juice
Stir together and then allow to sit for about 20 minutes so that the sugar begins to dissolve in the lemon juice and juice from the mashed berries.
Cook over high heat until the mixture comes to a boil. Lower the heat slightly to a medium high heat and continue cooking and stirring frequently until the mixture is reduced by about a 1/3 and is slightly thickened and looks glossy.
Pour into a jar and allow to cool then refrigerate it for up to 3 weeks or freeze it for up to 6 months. Try this soon. We know you will be glad you did:-)
