Pork Tenderloin In Balsamic Rosemary Sauce
3 lb. pork tenderloin
2 tablespoons olive oil
salt and pepper
Preheat oven to 450 degrees. Dry the roast with paper towels then season all over with salt and pepper. Heat oil in a heavy bottomed pan and nicely brown pork roast on all sides, this will take about 10-15 minutes. After the roast is browned, transfer the roast to a sheet pan and baste with half of the balsamic sauce. Roast in the hot oven for 15 minutes. Remove from the oven and allow the roast to sit for 5 minutes then cut into 1/2 inch slices and serve with remaining sauce on the side.
