Dinner – Healthy and Delicious
Sometimes we make things for dinner that taste really good, but are not necessarily so good for us. Then there are those healthy meals that leave something to be desired with regard to taste. This one is both good and good for you! By all accounts wild caught salmon is one of the healthiest foods you can eat. Dark green leafy vegetables like fresh organic baby spinach, are loaded with healthy benefits. And carrots likewise are full of vitamins and minerals. So this is a great way to satisfy your taste and your health. And it is quick and easy to make. So, dear chums….bon appetit!
Salmon and Spinach with Mustard Sauce
Baby Carrots with Honey Garlic Glaze
Carrots
1 bag of baby carrots
1/2 stick of butter
2 tablespoons honey
1 clove garlic minced
salt and pepper to taste
Melt butter and honey together. Pour over the carrots, add garlic and stir together. Sprinkle with salt and pepper. Roast in a hot 400 degree oven for about 10 minutes or until carrots are lightly browned.
Salmon
Wild caught Salmon (6 fillets)
Fresh baby spinach (1/2 lb)
4 tablespoons butter
1/2 cup dijon mustard
1 clove garlic, minced
2 tablespoons white wine
Saute salmon fillets in 2 tablespoons of butter until browned. Remove from pan and keep warm while you make the mustard sauce. To the pan add the additional 2 tablespoons of butter and melt. Stir in mustard and garlic and whisk together. This mixture will likely separate. Add the white wine and whisk again. It will come together and be creamy. Place each salmon fillet on a bed of fresh spinach and pour some of the hot mustard sauce over the fish and spinach. The spinach will wilt slightly under the heat of the sauce. Serve with glazed carrots on the side.
