Creamy Chipotle Taco Dip

This could be the star of your next party 🙂If you like tacos, con queso dip and chipotle chiles, you are going to love this dip! It’s simple to make and really, really good!  Make some this weekend and no matter what you are doing it will feel like a party!

Creamy Chipotle Taco Dip

1 lb lean ground beef (or turkey if you prefer)
2-3 Tablespoons taco seasoning
1 red chile, chopped
1/4 onion, chopped
8 oz pkg. cream cheese (room temperature works best)
Chipotle Tabasco sauce
corn kernels (optional)
Additional chopped onion and chiles, and chopped cilantro for garnish

Brown the ground beef and add taco seasoning, chopped chile, and onion.  Stir to combine and lightly saute chile and onion.  Stir in cream cheese until it melts and then add Chipotle Tabasco sauce.  How much you add will depend on how spicy you like it.  Start with a tablespoon and keep adding and tasting the dip until it is the way you like it.  Stir in corn if you are using it. Heat through and then spoon into a bowl and top with a bit of chopped onion, chiles and cilantro.  Serve with tortilla chips and maybe a margarita.
